This versatile drink can be made as a cocktail with whiskey, gin, or vodka, or as a refreshing mocktail by adding more club soda.

For the Honey Rosemary Syrup: Add the honey and water to a saucepan and stir until incorporated. Add in the rosemary sprigs, bring the mixture to a boil, then remove from heat. Let the syrup cool completely. For the Cocktail: Add 1.5oz whiskey (if using), 1oz cooled rosemary syrup, and 1.5oz fresh squeezed lemon juice to a shaker filled with ice. Shake well until thoroughly chilled. Pour the mixture over a glass filled with fresh ice. Top off with club soda to your desired level. Garnish with a slice of lemon and a fresh rosemary sprig, if desired. For a mocktail, omit the whiskey and add more club soda.
