Ginger Pomegranate Meatballs

This is a super tasty take on some Asian meatballs. Inspiration came from a #halfbakedharvest recipe and you’re definitely gonna want to give these a try!

For the Meatballs: Combine the ground chicken, chopped green onion, minced garlic, minced ginger, 1/2t pepper and 1/2t red pepper flakes. Form into small balls and lay on parchment paper on a baking sheet. Toss the broccoli with 1T oil, salt, and pepper and add to the other half of the baking sheet. Bake at 450 degrees Fahrenheit for 18-20 minutes. Coat the meatballs in the prepared sauce and bake for another 3-4 minutes. For the Sauce: Combine 1T oil, soy sauce, pomegranate juice, hoisin, honey, apple cider vinegar, and 1/2t red pepper flakes in a saucepan. Bring to a boil, then reduce heat and simmer until the sauce has reduced by a third.
