Chop your chicken in to small pieces. In a large pan or wok, add the oil and chicken. Season with salt and pepper and cook through, then remove. In the meantime cook the rice (in a separate pot). Add the sesame oil. Cook the onion and carrots until soft, then if you’d like add the peas. After a minute, add the chicken back in and push everything to one side of the pan. Crack the eggs and scramble. Mix it all together. Pour in the soy sauce to taste, mix and eat!! Enjoy!
