Boil water and cook the gnocchi (it floats when it’s done!). In the meantime Cook the sausage and garlic, then add the heavy cream. Bring to a simmer until it slightly reduces. Remove heat then add the remaining ingredients (Parmesan, truffle oil, spinach, salt, pepper). Toss in the pasta and plate!
