Homemade baked truffle fries, made crispy and seasoned to perfection. They are even better with lots of shredded Parmesan and some garlic aioli!

Wash and slice the potatoes into fries. Bathe them in an ice bath to remove the starch for as long as you can (at least 30 minutes for best results)! Rinse and pat them completely dry! Toss the fries in both olive oil and truffle oil. Season well with salt, pepper, and optional garlic powder. Spread them evenly on a baking sheet and bake at 450°F (232°C) for about 40 minutes, flipping at least once halfway through. Once crispy, remove from the oven and sprinkle on the Parmesan cheese. Then eat and enjoy!
