Cook your pasta til al dente and reserve some pasta water. Finely chop the veggies and herbs. Cook the pancetta in the oil and the. Add the veggies and cook until soft. Remove. Cook the ground meat and season with salt and pepper. Once done add the garlic, cook for 1 min. Add the wine and reduce completely. Add half the broth and half n half, the herbs, cover and simmer for 1 hour. Add the remaining liquids and simmer again. Season with more S&P if needed toss in the pasta and some pasta water. Add fresh parm and eat!
