1. Add the balsamic vinegar and brown sugar to a pan. Bring to a boil and simmer for 5 minutes. Remove from heat to create a balsamic glaze. 2. Season the chicken with salt and pepper. 3. Grill or pan-fry the seasoned chicken. Once almost cooked through, top with the sliced mozzarella cheese. 4. Place the chicken under a broiler until the cheese is melted and bubbly. 5. Top the cooked chicken with diced tomatoes and chopped basil. Drizzle with the balsamic glaze and enjoy!
