Season all sides of the meat generously with salt and pepper. Heat 1T of oil in the Dutch oven m, and add half the meat. Sear each side for 4-5 mins until nice and browned and then remove. Repeat for 2nd batch. Add 1T of oil and the onion, cooking for 5 minutes. Next add the garlic and wine, deglaze and bring to a simmer. In goes the Rosemary, salt and pepper. Cook for a few minutes then add the beef broth and the short ribs. Once they are simmering, cover and reduce heat. Cook for 3 hours or until pull apart tender!
