Slice your pork in half (optional but the seasoning will penetrate more and you can cook faster). Combine the dry seasonings and coat all sides. Add to your crockpot along with the chopped shallot, garlic, jalapeno, and green Chiles. Squeeze the limes and orange juice. Cover and cook for 6-8 hours or until fork tender. Shred and broil some of the meat on low for about 7 minutes. Build your tacos or nachos and eat!
