Homemade Pesto Pasta!

Homemade pesto is so delicious and also so easy to make. Sprinkle on the toasted breadcrumbs takes it to the next level! I tried arugula this time, basil is more traditional and can easily be swapped in.

For the Pesto: Combine 4 cloves garlic, 4oz arugula (or basil), 3 tablespoons pine nuts, 1 teaspoon lemon juice, and 1/2 cup olive oil in a blender. Blend until smooth. For the Toasted Breadcrumbs: In a pan, melt 1 tablespoon butter. Add 1 cup breadcrumbs, season with salt and pepper to taste, and cook until golden. Add 1 minced clove garlic, heat for 30 seconds, mix, and remove from the pan. For the Main Dish: Boil 12oz pasta to Al dente, reserve 1 cup of the pasta water, and then strain the pasta. Add the prepared pesto, a little reserved pasta water, and 1/2 cup grated Parmesan to the pasta. Mix well and plate. Top with cooked chicken breast (if adding), toasted breadcrumbs, and more grated cheese. Enjoy!
