If you haven’t tried this recipe yet, you definitely need to! Also they are perfect as leftovers throughout the work week! Add or omit whatever you want, but these are how I make mine!

Cook the sausage, mushrooms, and spinach. Boil the noodles until barely al dente. In a bowl mix the ricotta, egg, 1/2C mozzarella, and pepper. Add in the sausage, mushrooms and spinach and mix together. Lay out the lasagna, spread on some mixture and roll it up. In a baking dish add some pasta sauce and the lasagna rolls. Top with more sauce and the remaining mozzarella. Bake at 375 for 30 minutes with foil on, remove and bake another 15 minutes. Enjoy!
