Pesto Pasta!!

Pesto Pasta!! Have you ever made your own pesto? You can absolutely use store bought for the recipe, but I strongly recommend making it fresh. It only takes a few minutes and you can do it while the dish is cooking! For the Pesto: 2C Basil Leaves 2T Pine Nuts 2 Cloves Garlic 1/2C Olive Oil 1/2C Grated Parmesan Add to a blender/processor and mix until smooth! For the Pasta: 1 Chicken Breast (cubed)(optional) 1T Butter 1T Oil 1C Sliced Mushrooms 1 Pint Cherry Tomatoes (halved) 3 Cloves Minced Garlic 1C White Wine 1/3C Heavy Cream 1C Pesto Salt and Pepper to taste 12oz Pasta (your choice!) Grated Parmesan Cheese If you are wanting chicken, add some oil, the chicken, season with salt and pepper and remove once cooked. For the pasta, add the butter, oil and mushrooms and cook til tender and golden. Add in the tomatoes, garlic, salt and pepper and cook til they are a little wilted. Next add the wine (and chicken) and reduce liquid by half. Stir in the cream. Mix in the pesto. Add the noodles, and plate! For the Pesto: Add basil leaves, pine nuts, 2 cloves garlic, 1/2 cup olive oil, and 1/2 cup grated Parmesan to a blender/processor and mix until smooth. For the Pasta: If you are wanting chicken, add some oil to a pan, add the cubed chicken breast, season with salt and pepper, and remove once cooked. For the pasta, add 1 tablespoon butter, 1 tablespoon oil and 1 cup sliced mushrooms to the pan and cook until tender and golden. Add in the cherry tomatoes, 3 cloves minced garlic, salt and pepper and cook until they are a little wilted. Next add 1 cup white wine (and the cooked chicken, if using) and reduce liquid by half. Stir in 1/3 cup heavy cream. Mix in 1 cup of the prepared pesto. Add the cooked noodles, and plate!
