Slice the veggies, and melt butter in a soup pot. Add the carrots, celery and shallot. Season with salt and pepper and cook until soft. Add the garlic and cook for another 30 seconds. Pour in the broth and add the remaining seasonings. Stir and bring to a simmer. Add the uncooked chicken breast. Cover and simmer for 2 hours. Remove, debone and shred the chicken. Add back on. Boil some noodles. Add more salt and pepper as needed. Build and eat!
