Homemade Penne alla Vodka Pasta

Cook any protein you want to add, or roast any veggies (otherwise eat as is!). In your pot, heat the oil and add the shallot. Cook until deeply golden and add the garlic. After 30 seconds, add the vodka and reduce for 2 minutes. Stir in the tomato paste and then add the crushed tomatoes, salt, and red pepper flakes. While that simmers for 15 minutes, cook your pasta. Reserve some water. Reduce the heat and add the heavy cream and Parmesan. Once warm, stir in the pasta, pasta water, and any protein. Plate and eat!
