This easy One Pot Sausage Gnocchi recipe comes together in less than 30 minutes and is designed for minimal cleanup, perfect for a busy weeknight meal.

Boil the gnocchi until almost cooked (right before it floats). Strain. Add the oil and cook the onion until soft. Add the garlic and cook for 1 minute. In goes the sausage cooking until lightly browned. Add the gnocchi, tomatoes, chicken stock, salt and pepper. Stir, cover, and simmer for 8-10 minutes. Remove lid, add the cheese and broil on low for 3-4 minutes, until the cheese is bubbly. Remove, sprinkle on the basil, and serve!
