Chicken Stir Fry w/ Noodles

We usually eat our stir fry with rice and save noodles for a different dish in the week. This means I was excited to give this recipe a go (and the kids were too!) Super easy, and perfect for a weeknight dish.

In one bowl, add the chicken and 1T soy, combine and set aside. In another, beat two eggs. In a third, combine the remaining soy, garlic, hoisin, ginger, rice vinegar, and green onion. Cook you noodles til Al dente, heat 1T oil in a wok and cook the chicken, remove. Heat another 1T Oil and cook the chopped veggies. When done, add back the chicken and half the sauce. Cook for 2 mins then In goes the noodles and sriracha. Remove the heat and toss in the eggs (careful not to over cook). Top with sesame seeds! Enjoy!
