Cook your sausage, mushrooms and spinach (or whatever else you are adding). Bring salted water to a boil and cook the manicotti for 4 minutes then remove. In a bowl, mix the ricotta, egg, 1C Mozz, Parmesan, S&P, Basil. Mix in the sausage and veggies. Add to a ziploc bag and cut off a little of the corner. Add a layer of sauce to the bottom. Pipe in the cheese mixture to the manicotti and set in the dish. Cover with the remaining sauce and cheese. Bake covered at 375 for 40 minutes and then Uncovered for another 10. Enjoy!
