Slice the chicken breast so they are thinner (or pound them). In a bowl, mix the salsa, olive oil, juice from 1 lime, cumin, salt, and pepper. Add the chicken to the marinade and let it marinate for at least 1 hour (2 hours is recommended). Preheat your grill. Cook the chicken for 3-5 minutes per side. When flipping, add the spicy cheese halfway through the second side's cooking time. Remove from the grill and let rest. Spritz with more lime juice as needed and top with fresh cilantro before serving.
