Roasted Tomato and Garlic Pasta

This pasta has been one of our favorite weeknight dishes for a long time. The steps are simple, its relatively quick, and the kids love it. We add sausage in ours, but you definitely don’t have to!

In a bowl, add the cherry tomatoes (halved), 1 tablespoon oil, 2 minced garlic cloves, salt, and pepper. Add to a baking sheet and bake at 400°F (200°C) for 20 minutes. In the meantime, boil the spaghetti noodles according to package directions. If adding sausage, cook the 1/2lb spicy sausage in a separate pan until browned, then remove. Heat 2 tablespoons oil and 2 tablespoons butter in a pan. Add the red pepper flakes and the remaining 2 minced garlic cloves and cook until fragrant. Toss in the cooked noodles, roasted tomatoes, cooked sausage (if using), and chopped basil. Sprinkle on the shredded Parmesan and enjoy!
