Easy Crockpot Pulled Pork

This recipe makes a fall off the bone tender sandwich that takes minutes to prep. Honestly I don’t know why you’d cook it any other way.

For the pulled pork: Combine 1.5 cups BBQ sauce, adobo sauce, and diced chipotle pepper in a bowl. Mix the paprika, salt, and pepper together and rub on all sides of the pork shoulder. Pour the BBQ mixture into the bottom of a crock pot, add the sliced onion, then place the seasoned pork shoulder on top. Top with the remaining BBQ sauce. Cook on low for 8 hours, until the pork is pull-apart tender. Shred the pork, and add it back to the BBQ sauce in the crock pot for another hour. For the slaw: Combine the 7oz slaw mix, juice from 1 lime, 1 tablespoon oil, diced jalapeño, 1 tablespoon honey, 1/2 teaspoon cumin, and salt and pepper to taste. Serve the pulled pork topped with the prepared slaw.
