Heat a pan and cook the sausage. Remove and add oil. Cook the chopped shallots for a few minutes. In the meantime, boil the water and cook the pasta top al dente. Add the garlic, sliced sun dried tomatoes, dried thyme, and red pepper flakes. Cook for 1 minute and add the white wine. Reduce by half, then add back the sausage. Lower the heat, stir in the heavy cream, seasoning well with salt and pepper. Add the cooked pasta and pasta water (as needed). Stir in Parmesan cheese and eat!
