In a dish, mix the chili powder, cumin and paprika. Season the chicken breast with S&P and 1t of the seasoning. In a pan heat the oil and chicken the chicken fully through, remove. Add more oil and the cauliflower rice (or cooked rice). Add the remaining seasoning, the garlic and green onion. Stir in the chilis, beans, and salsa. If using cauliflower, cook for 6-8 mins to soften… if using cooked rice, move to next step! Add back the chicken, sprinkle on the cheese and melt. Enjoy!!
