In a pan, heat 1T oil add the onion and cook. Add in the chicken, season with S&P. Once down, move to 1 half of the pan. Add the other T of oil and the rice. Cook for two minutes then add the can of tomatoes, beans, broth, and all the spices. Cover, simmer and cook for 25-30 minutes (until the rice is done). Remove lid, add the cheese and cover until melted. Top with whatever you want. Enjoy!
