Dice the peppers and onion. Mince the garlic. Partially cook the sausage. Get the rice cooking. Add the diced peppers and onion to the sausage and cook for 5 minutes. Add the minced garlic, salt, pepper, cumin, and chipotle chili powder. Add the diced fire roasted tomatoes and heat through for about 3-5 minutes. Serve the sausage and pepper mixture over the cooked rice and enjoy!
