Cook the bacon, diced sweet potatoes, and chopped jalapeño. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Grease a muffin tin. Layer the cooked potato mixture, then the egg mixture, then cheese, and finally more potato mixture into each muffin cup. Bake at 350°F (175°C) for 22-25 minutes.
