Pistachio Crusted Scallops!

Typically I am of classic scallops seasoned with salt and pepper. But I wanted to try something new, and I gotta say, they were awesome! I will definitely be experimenting more, but for now, you should give these ones a try!! We served next to the steak from the previous post and it made for a great surf and turf!

In a pan, melt the butter and roast the pistachios for 5 minutes. Remove and finely chop. Add the thyme and chives, combine. Heat some oil until smoking, add the scallops and get a nice sear on each side. When done, roll in the pistachio mix and eat!
