For the marinade, add 3 tablespoons of olive oil, 1 juiced lime, 3 minced garlic cloves, 1 teaspoon paprika, 1 teaspoon cumin, 1 teaspoon salt, and 1/2 teaspoon pepper to a bag. Add the chicken breasts to the bag, mix well, and marinate for 1.5 hours. Fire up the grill and cook the chicken for 3-5 minutes per side, depending on thickness. After the first flip, add shredded mozzarella and the seasoned cherry tomatoes. To season the cherry tomatoes, toss them with a little oil, salt, pepper, and garlic powder. Finish cooking the chicken until done. Top the grilled chicken with the seasoned tomatoes, sliced avocado, fresh basil, and a drizzle of balsamic vinegar. Enjoy!
