Holy smokes… tried out a new version of the stuffed pepper, by un-stuffing it and my goodness.. this dinner was incredible. This one seriously cracked Top 5 weeknight meals. You need to try this one THIS WEEK! Something the whole family can and will enjoy!

Cook the onion in oil for 2 mins. Add the chopped peppers and sauté for 6 mins. Remove and add in the sausage. Cook til browned. Add the spices, garlic, and tomatoes. Cook for 2 mins then add the pepper mix back in. Serve over rice and top with some shredded cheese!
