In a Crock Pot: Combine chicken breasts, chopped onion, diced chipotle peppers in adobo, paprika, salt, pepper, BBQ sauce, and beer. Cover and cook at 350 for 3 hours. Remove chicken and shred. Add shredded meat and cheese into corn tortillas. Roll the tortillas and coat with oil. Bake in the oven for 6-8 minutes at 425 degrees! For the Crema: Combine sour cream, mayo, minced garlic, the juice of 1 lime, and salt to taste. For the Elote Corn: Combine corn, diced jalapeños, crema, cotija, and chipotle chili powder. Enjoy!
