Cover the bottom of a 9x13 baking dish with a layer of tater tots. In a bowl, whisk together 7 eggs with a little milk. Brown the breakfast sausage in a pan, then spread it evenly over the tater tots in the baking dish. Pour the whisked egg mixture over the sausage and tots. Add a generous amount of cheddar cheese on top. Season with salt and pepper to taste. Cover the dish with foil and bake for 1 hour at 375°F (190°C). Remove the foil and bake for another 20 minutes, or until the egg is set and cheese is bubbly and lightly browned.
