Trim any excess fat off the pork shoulder. In a bowl, mix together the first set of ingredients (Thyme, Rosemary, 1 Tablespoon Brown Sugar, Salt, Pepper, Apple Cider Vinegar, Water) to create a rub and cover the meat thoroughly. Sear both sides of the pork shoulder in a hot pan. Place the seared pork in a slow cooker and cook for 8 hours on low. Once cooked, shred the pork. In a separate saucepan, combine the sauce ingredients (Balsamic Vinegar, Soy Sauce, Garlic Clove, 2 Tablespoons Brown Sugar) and simmer for 3 minutes. Toss the shredded meat with the sauce. Enjoy!
