If you are like us and you make Mexican food a lot, you have to give this one a try! Pretty easy to make, will give you leftovers for a week, and is absolutely delicious! This can also easily be made vegetarian by removing the meat! Save it, make it, and tag me when you do!

Cook the veggies in some oil adding in 1t of both the chili powder and cumin. Remove when done. Add the more oil, the corn, and 1t of chili powder and cumin. Remove when done. Add the ground beef, salt, remaining cumin and chili powder. Once done add the veggies and corn, mix together. In a greased baking dish pour in 1/3 of the enchilada sauce. Then layer in half of your tortilla strips. Spread out the refried beans, add half your meat/veggie mixture, cover with 1 cup of cheese, and pour on 1/3 of sauce. For the next layer do the same (minus the beans). Bake at 400 for 20 minutes. Let rest for 5 and then eat!
