Grease the crockpot. Place the chicken breasts in the pot and season generously with salt and pepper. Top the chicken with the minced garlic, chopped onion, quartered artichoke hearts, and sun-dried tomatoes. Cover the pot and cook on low heat (or 325°F if using an oven-safe slow cooker, or use a 'low' setting) for a few hours until the chicken is cooked through and tender. Towards the end of cooking, add the spinach and cook for a few minutes until it wilts. Serve and enjoy!
