Homemade Penne alla Vodka Pasta

My belly is already craving the leftovers. Best part about this dish is you can use any protein you like and even add some veggies like roasted broccoli!

What you need
cup pasta water

shallot
tbsp vegetable oil

oz penne

cup parmesan cheese

tbsp tomato paste

cup heavy cream

tsp table salt

clove garlic clove

fl oz vodka

bunch veggie mix

tsp red pepper flake
oz Crushed Tomatoes

Instructions
Cook any protein you want to add, or roast any veggies (otherwise eat as is!). In your pot, heat the oil and add the shallot. Cook until deeply golden and add the garlic. After 30 seconds, add the vodka and reduce for 2 minutes. Stir in the tomato paste and then add the crushed tomatoes, salt, and red pepper flakes. While that simmers for 15 minutes, cook your pasta. Reserve some water. Reduce the heat and add the heavy cream and Parmesan. Once warm, stir in the pasta, pasta water, and any protein. Plate and eat!View original recipe
