Burrito Casserole! The best part about this dish specifically is that it’s as good reheated as it is the first time you eat it. For us, that means lunches for the kids and leftovers during the week. Ingredients: 1/2 Red Pepper, chopped 1/2 Onion, diced 1 Jalapeño, chopped 1C White Rice 2T Chili Powder 1/2t Garlic Powder 1t Cumin 1t Oregano 1t Salt 1C Corn 1C Black Beans 2 Chicken Breasts, cooked and shredded 3C Chicken Broth (@pacificfoods) 1T Oil 2T Tomato Paste (@simpletruth4u) Shredded Mozzarella Add everything (besides the cheese) in to casserole dish and mix it all well!
