Tuscan Salmon

What you need

tbsp unsalted butter

cup parmesan cheese
tbsp vegetable oil

sun dried tomato

clove garlic clove

onion

tsp salt & pepper

cup dry white wine

cup half & half
salmon fillet
Instructions
Remove the skin from the salmon and generously season both sides with salt and pepper. In a cast iron pan, heat the oil on medium high, and cook for 5 mins (ish). Flip and cook another 2-3 depending on thickness and remove. Add the butter to the pan. Cook the garlic until fragrant, then add in the onion (2 mins). Add in the wine and reduce slightly. Add the tomatoes and cook (2 mins). Reduce heat to low, add the half and half and salt and pepper to taste. Simmer for 5 mins. Add the spinach. Once wilted, add the cheese. Simmer for 2 mins. Add the salmon, cover with sauce and serve.View original recipe
