Apple Cider Pot Roast

A fall-inspired slow-cooked beef roast recipe, perfect for serving with potatoes or on a bun as a sandwich. The prep is straightforward, leading to tender, pull-apart beef infused with apple cider flavor.

What you need
cup flour

pepper
tsp salt

tbsp olive oil

tbsp butter

clove garlic clove
lb chuck roast

cup apple cider

Instructions
Trim the meat as necessary and season all sides well with salt, pepper, and garlic powder. Then, coat lightly with flour. Preheat the oven to 325°F. In a Dutch oven, heat around 1 Tbsp of olive oil. Sear all sides of the beef for 2 minutes per side and then remove it from the pot. Add another 1-2 Tbsp of olive oil and cook the sliced onions for about 5 minutes. Add the butter and minced garlic, cooking for another 1 minute. Season with a little salt and pepper and add 1 cup (or more) of apple cider. Reduce the liquid for 5 minutes and then add the seared beef back to the Dutch oven. Cover and cook for approximately 3 hours, or until the meat is pull-apart tender. Shred the meat and add just a little more apple cider if desired. Pair with your favorite sides or pack onto a bun for a sandwich.View original recipe
