Beef Enchiladas

Best Beef Enchiladas Ever!! (Seriously, they are so good) The meat does need to slow cook for this recipe, but other than that it is pretty simple!

What you need

red onion

tbsp apple cider vinegar

cup shredded mozzarella

tsp onion powder

tomato paste

tsp granulated sugar

tsp chili powder

cup beef broth

tsp cumin powder

whole wheat tortilla
diced tomatoes with green chiles

garlic

tsp salt
Instructions
For the Enchiladas: Cut the meat to 2” pieces. Season with the salt pepper and cumin. Sear each side of the meat in a Dutch oven and remove. Chop the onion and garlic and cook for 3 mins. Stir in the tomato paste and beef broth and deglaze. Add the vinegar and Chiles and then add back the meat. Cook until fork tender, shred and keep in the sauce. Roll into a tortilla, place on a pan with enchilada sauce, cover with more sauce and cheese. Bake at 375 for 15-20 minutes Enchilada Sauce: Cook the onions and garlic in oil, then add remaining ingredients and heat until thickened. Enjoy!!View original recipe
