A delicious and easy slow cooker pot roast recipe featuring a chuck roast seared and then slow-cooked with beef broth, Worcestershire sauce, and herbs.
Season all sides of the roast with salt, pepper, and garlic powder generously. Heat the oil in a pan on medium high heat and sear the beef until browned on all sides. Remove the beef. Lower the heat to medium and cook the onion until softened. Remove the onion. Then, add the beef broth, dried thyme, dried rosemary, and Worcestershire sauce to the pan. As it simmers, scrape any bits off the bottom of the pan to deglaze. Add the seared beef, cooked onion, and the broth mixture to your slow cooker. Add potatoes and carrots (quantities as desired). Cook for 8-9 hours.
