Chicken and Strawberry Salad w/ Homemade Raspberry Vinaigrette!

Welcome back to easy meal Monday. With all the snow we have been getting I needed something to transport me to spring. This salad is fresh, light, and so easy to make! Definitely save it and give it a try!

What you need

pepper

cooked chicken

head lettuce

tsp garlic powder

tsp salt

strawberries

tsp dijon mustard

tbsp red wine vinegar

tbsp table sugar

tbsp plain yogurt

cup cooking oil

apple

tbsp water

pecan nuts

box fresh raspberries
Instructions
Season your chicken with salt, pepper, and garlic powder to taste. Grill or pan fry and then chop into pieces. For the Homemade Raspberry Vinaigrette: Boil the raspberries in the water and sugar. Strain the mixture into a blender (you can add a little of the raspberry purée if desired). Add the remaining vinaigrette ingredients (oil, red wine vinegar, yogurt, dry mustard or dijon, and salt) to the blender and blend until smooth. Add the chicken and remaining salad ingredients (lettuce, strawberries, apples, pecans, mozzarella) to a bowl and dress with the homemade raspberry vinaigrette.
