Easy Crockpot Pulled Pork

This recipe makes a fall off the bone tender sandwich that takes minutes to prep. Honestly I don’t know why you’d cook it any other way.

What you need

tsp salt

tsp ground cumin

tbsp adobo sauce

oz cole slaw mix

cup bbq sauce

tsp paprika
lime
chipotle pepper

tbsp cooking oil

tbsp honey

onion

lb pork shoulder

jalapeno pepper
Instructions
For the pulled pork: Combine 1.5 cups BBQ sauce, adobo sauce, and diced chipotle pepper in a bowl. Mix the paprika, salt, and pepper together and rub on all sides of the pork shoulder. Pour the BBQ mixture into the bottom of a crock pot, add the sliced onion, then place the seasoned pork shoulder on top. Top with the remaining BBQ sauce. Cook on low for 8 hours, until the pork is pull-apart tender. Shred the pork, and add it back to the BBQ sauce in the crock pot for another hour. For the slaw: Combine the 7oz slaw mix, juice from 1 lime, 1 tablespoon oil, diced jalapeño, 1 tablespoon honey, 1/2 teaspoon cumin, and salt and pepper to taste.
