Elote Enchiladas
Elote Enchiladas - A new Top 5 all-time favorite!!! SAVE this and add to your menu! With so many favorites, it’s hard to crack into my top 5, but this dish was absolutely incredible and will be a stable for us! Let me know what you think!! Ingredients: 2-3 Cups Cooked Chicken Tortillas (corn or flour work!) 1.5C Shredded Monterey Jack 1 Jalapeno 8oz Green Enchilada Sauce Cotija Cheese 3/4C Avocado Oil Mayo 2T Plain Yogurt 1/2 Lime 1T Hot Sauce 1T chili Powder 3/4t Cumin 1/2t Salt Corn If cooking chicken, season with salt, pepper, garlic powder, cook, then shred. Otherwise you can use rotisserie. Roast your corn and jalapeno in some oil. In a bowl, mix the mayo, yogurt, lime juice, spices. Add the corn mixture, stir and set aside few scoops aside (for topping). Add the cook chicken. Warm your tortillas. Rollin some chicken mixture. In an oven safe pan (I used the same one), layer some enchilada sauce, then enchiladas, then more sauce. Top with Monterey Jack and bake at 375 for 25 minutes. Top with corn mixture and more cotija! oz cotija cheese
fl oz oil

pepper

tsp garlic powder

corn

tbsp plain yogurt

tbsp hot sauce

cup cooked chicken
cup Avocado oil mayonnaise
lime

tbsp chili powder

oz green enchilada sauce

tsp ground cumin

cup monterey jack
