There are many ways to cook a delicious prime rib which can sometimes make it intimidating. It is not cheap, so the last thing you want to do is mess it up…
Rub all sides of the prime rib (you can use a binder as well) and the. Wrap in cling wrap for a feed hours before cooking or overnight!
NO PEEK METHOD: preheat the oven to 500 degrees. Place the prime rib on a rack, fat side up, over a pan (to catch the drippings. You are going to leave it in the oven 6 minutes for every 1 pound of meat. I had a 5 pounder so I set the timer for 30 minutes. Immediately after the timer sounds, turn off the oven. DO NOT OPEN FOR 2 HOURS!! (Hence the no peek)
It will come out medium rare, every time! If you want it medium, do 7 minutes per pound! That’s it… easy peasy!
