French Onion Short Rib Soup

What you need

french bread

soy sauce
cup beef broth

tsp crushed red pepper

tsp ground sage

tsp dried thyme

garlic
shallot

yellow onion

black peppercorn

salt

tbsp extra-virgin olive oil
lb short ribs
Instructions
Season the shorts ribs with salt and pepper. Pre heat the oven to 325. In a Dutch oven, heat 1T olive oil, and add the ribs. Sear on each side until golden and remove. Add the butter, once melted add the sliced onions. Cook for 8-10 minutes until soft and golden. Add the chopped shallots, minced garlic and cook for 1 minute. Stir in the thyme, sage and red pepper flakes. Add the broth and soy and bring to a simmer. Toss in the short ribs, cover and bake for 2.5 hours until tender. Remove the bones and lightly shred, and return the meat to the soup. Thinly slice your bread, add the coat with oil and sprinkle with shredded cheese. Broil on low until melted.
