Ginger Pomegranate Meatballs

This is a super tasty take on some Asian meatballs. Inspiration came from a #halfbakedharvest recipe and you’re definitely gonna want to give these a try!

What you need

pepper

tbsp green onion

cup pomegranate juice

head broccoli

tbsp fresh ginger

tbsp honey

lb ground chicken

tbsp apple cider vinegar

tsp red pepper flake

tbsp cooking oil

cup soy sauce

tbsp hoisin sauce

clove garlic clove
Instructions
For the Meatballs: Combine the ground chicken, chopped green onion, minced garlic, minced ginger, 1/2t pepper and 1/2t red pepper flakes. Form into small balls and lay on parchment paper on a baking sheet. Toss the broccoli with 1T oil, salt, and pepper and add to the other half of the baking sheet. Bake at 450 degrees Fahrenheit for 18-20 minutes. Coat the meatballs in the prepared sauce and bake for another 3-4 minutes. For the Sauce: Combine 1T oil, soy sauce, pomegranate juice, hoisin, honey, apple cider vinegar, and 1/2t red pepper flakes in a saucepan. Bring to a boil, then reduce heat and simmer until the sauce has reduced by a third.View original recipe
