These homemade gluten-free cinnamon rolls, perfect for Mother's Day, require a little effort but are incredibly rewarding. The recipe can be adapted to be non-gluten-free by using regular flour and omitting xantham gum.
For the rolls: In a bowl, whisk the eggs. Add the sugar, warm milk, and yeast, mix well, and let rest for 5 minutes. Add the remaining dough ingredients (melted butter, apple cider vinegar, xantham gum, baking soda, and flour) and fold until a dough is formed. Cover the dough and let it rise in a 100-degree Fahrenheit oven for 1 hour.
For the filling: In a separate bowl, combine the brown sugar, softened butter, vanilla extract, and cinnamon until well mixed.
Assemble and bake: Once the dough has risen, spread it into a rectangle shape. Evenly spread the filling over the dough. Carefully roll the dough into a log, then cut it into individual rolls. Place the cut rolls into a greased baking dish. Bake for 25-30 minutes at 400 degrees Fahrenheit.
For the frosting: While the rolls are baking or cooling, combine the softened butter, vanilla, milk, and powdered sugar in a bowl and mix until smooth.
Finish: Let the baked cinnamon rolls rest for a bit, then generously frost them. Serve and enjoy!
