Homemade Jambalaya

Jambalaya has always been one of my favorites! In a pinch there are some good pre made options but nothing hits better than making it from scratch!

What you need

tsp oregano

tbsp tomato paste

cup long grain rice

oz raw shrimp

can canned diced tomatoes

tsp table salt

pepper

tsp cayenne pepper

onion

tbsp paprika

bay leaves

oz andouille sausage
tbsp vegetable oil

cup chicken broth

celery stalk

tbsp salt

clove garlic clove
Instructions
First, prepare the Cajun Spice Blend by mixing 1 tablespoon Paprika, 0.5 tablespoon Salt, Garlic and Onion Powder, 1 teaspoon Oregano, Basil, Thyme, and 0.5 teaspoon Cayenne, Black Pepper together. You may save any remaining blend for other dishes. Next, heat oil in a Dutch oven on medium-high heat. Cook the diced chicken, then move it to the side. Cook the sliced Andouille sausage. Reduce the heat to medium. Add in the chopped celery stalks, diced pepper, and diced onion and cook for 8-10 minutes until softened. Then, add the prepared Cajun Spice Blend, tomato paste, and 0.5 teaspoon salt, and stir them together. Pour in the chicken broth, diced tomatoes, minced garlic, and bay leaves. Bring the mixture to a simmer, then add the long grain rice, cooking for approximately 20 minutes until the rice is soft. In the meantime, season and cook the shrimp separately.
