Homemade Pesto Pasta!

Homemade pesto is so delicious and also so easy to make. Sprinkle on the toasted breadcrumbs takes it to the next level! I tried arugula this time, basil is more traditional and can easily be swapped in.

What you need

tbsp pine nut

clove garlic clove
cup pasta water

oz arugula

tbsp butter

oz pasta

cup olive oil

tsp lemon juice
tsp salt & pepper

cup bread crumbs

cup parmesan cheese
Instructions
For the Pesto: Combine 4 cloves garlic, 4oz arugula (or basil), 3 tablespoons pine nuts, 1 teaspoon lemon juice, and 1/2 cup olive oil in a blender. Blend until smooth. For the Toasted Breadcrumbs: In a pan, melt 1 tablespoon butter. Add 1 cup breadcrumbs, season with salt and pepper to taste, and cook until golden. Add 1 minced clove garlic, heat for 30 seconds, mix, and remove from the pan. For the Main Dish: Boil 12oz pasta to Al dente, reserve 1 cup of the pasta water, and then strain the pasta. Add the prepared pesto, a little reserved pasta water, and 1/2 cup grated Parmesan to the pasta. Mix well and plate. Top with cooked chicken breast (if adding), toasted breadcrumbs, and more grated cheese. Enjoy!View original recipe
