Lemon Blueberry Mimosa!

A lot of you keep loving the mimosas so let’s add another one to the mix! The blueberry simple syrup can also be used for other cocktails or syrup for desserts and pancakes!

What you need
cup fresh blueberries
fl oz champagne

cup simple syrup
lemon zest

cup sugar

cup water

fl oz lemonade
Instructions
To make the blueberry simple syrup: Add 1 cup water and 1 cup sugar to a pan, stir and bring to a simmer. Once incorporated, add 2 cups blueberries and the zest from 1 lemon, then simmer for 5 minutes. Let cool and then strain into a jar. To make the mimosa: Combine 0.5 oz of the blueberry simple syrup, 2 oz lemonade, and approximately 4 oz champagne in a glass. Garnish with a lemon wedge and fresh blueberries.View original recipe
