What you need

shallot

tsp chipotle chili powder

tbsp tomato paste

cup rice

tsp oregano

clove garlic clove

tsp pepper

tsp garlic powder

cup cooking oil

tsp table salt

cup chicken broth

oz fire roasted tomatoes

tsp chili powder

tsp paprika

tsp ground cumin
chicken breast
Instructions
Mix the dry seasonings and oil for the marinade. Once ready, heat an oven safe skillet and sear the chicken for 3 minutes per side. Remove add oil and cook the shallot for a few minutes. Then add the garlic, and the uncooked rice. Stir in the tomato paste. Add the tomatoes and broth. Season with S&P, stir, and bring to a simmer. Add back the chicken, cover and bake at 350 for 30 minutes.View original recipe
